Indonesian Satay Recipe
Ingredients
500g lean pork cut into 2cm cubes
Juice of 1 lemon
1 clove garlic
2 tablespoons soy sauce
2 teaspoons ground coriander
SAUCE
1 clove garlic, crushed
1 small onion, finely chopped
1 tablespoon peanut oil
3/4 cup crunchy style peanut butter
2 tea spoon chili powder
3/4 cup water
1 tablespoon soy sauce
2 teaspoons brown sugar
Directions
Combine lemon juice, garlic, soy sauce and ground coriander, beat well and pour over pork cubes. Marinate for 2-4 hours turning occasionally. Thread meat on to bamboo skewers, 4-6 cubes to each. Barbecue on a greased grill for 3-4 minutes each side, brushing with marinade. Serves 4
SAUCE: Fry garlic and onion gently in oil in a small saucepan. When soft and golden, add remaining ingredients and simmer till thick. Just before serving stir in any remaining marinade. This sauce will keep in the refrigerator for several weeks and is delicious in sandwiches or as a dip for vegetables.
