2 pounds lean pork
 
1 cup salted peanuts
 
2 tablespoons coriander seeds, finely ground
 
2 cloves garlic, minced
 
1 teaspoon crushed red pepper, or to taste
 
1 1/2 cups chopped onions
 
3 tablespoons lemon juice
 
2 tablespoons brown sugar
 
5 tablespoons soy sauce
 
1/2 teaspoon black pepper
 
1/2 cup melted butter
 
1/2 cup chicken stock or water

Directions

Trim all fat, bone and sinews from the pork and cut it into one-inch cubes.
Combine the peanuts, coriander, garlic, red pepper, onions, lemon juice, sugar, soy sauce and black pepper in the container of an electric blender, or put them through a food mill.
Blend or grind to a fine puree.
Pour the puree into a saucepan and bring to a boil.
Add the butter and chicken stock.
Let cool and pour over the pork.
Let stand one or two hours.
Thread the meat on skewers and grill over charcoal, basting occasionally with the sauce.
