Indonesian Peanut Chicken Recipe
Ingredients
2 tablespoons chopped onion
1 clove garlic, minced
1 teaspoon cooking oil
1/2 cup peanut butter
4 teaspoons soy sauce
1 teaspoon brown sugar
1/8 teaspoon ground ginger
1/8 teaspoon crushed red pepper
1/2 to 1 cup hot water
2 to 2 1/2 pounds meaty chicken pieces (breasts thighs or drumsticks)
1 green onion, thinly sliced
1 tablespoon snipped cilantro or parsley
Directions
For peanut sauce, in a small skillet cook onion and garlic in oil till tender.
In a food processor bowl or blender container combine onion mixture, peanut butter, soy sauce, brown sugar, ginger, and pepper.
Cover and process or blend till smooth, adding enough hot water to give sauce desired consistency.
Rinse chicken and pat dry.
Place chicken, bone side down, in center of the cooking grill.
Grill 50 to 60 minutes or till tender and juices run clear, brushing generously with the peanut sauce during the last 10 minutes of grilling time.
Arrange chicken on serving platter; sprinkle with green onion and cilantro.
