Indonesian Salad Dressing Recipe

Ingredients
1 tblspn salad oil
1 small onion, finely chopped
1 clove garlic, crushed
1 tspn ground cumin
1 tspn curry powder
1/2 tspn ground coriander
1 tblspn white wine vinegar
1 tblspn caster sugar
125g crunchy peanut butter
2 tblspn fruit chutney
375ml water
Directions
Heat oil in a saucepan.
Add onion, garlic, cumin, curry powder and coriander.
Cook over gentle; heat for 3-4 minutes.
Stir in remaining ingredients and simmer for 15 minutes, stirring occasionally.
Cool to room temperature.
Sprinkle with chopped parsley, if liked, and serve with a selection of vegetables, and quartered hard boiled eggs.
