Indonesian Fish Curry Recipe
Ingredients
| Cod fillets | 1 1/2 Pound | |
| Flour | 2 Tablespoon | |
| Onion | 1 | |
| Tart apple | 1 Large | |
| Lemonjuice | 1 Tablespoon | |
| Butter | 1/4 Cup (16 tbs) | |
| Oil | 2 Tablespoon | |
| Curry powder | 2 Tablespoon | |
| 2 1/2 cups Fish broth | ||
| Golden Raisins | 2 Tablespoon | |
| Cornstarch | 2 Tablespoon | |
| Almonds | 1/2 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut fish into pieces, sprinkle with salt and coat with the flour.
Peel and slice onion.
Peel, core and slice apple and sprinkle with the lemon juice.
Heat the butter and oil in a flameproof casserole.
Add curry powder and onion and fry for 5 minutes.
Add fish and cook for a few minutes on all sides.
Add apple slices and cook for 3 minutes.
Pour broth into casserole and add raisins.
Blend cornstarch with a little broth or water and stir in.
Bring to a boil and simmer for 10-15 minutes.
Add almonds and cook for a further 2 minutes.
Taste and adjust seasoning and serve.
