Indonesian Chicken And Pear Salad Recipe

Ingredients

 Cooked and cubed chicken1 1⁄2 Cup (24 tbs)
 California bartlett pears3 , halved and cored (Fresh)
 Macadamia nuts/Peanuts1⁄2 Cup (8 tbs), coarsely chopped
 Cucumber slices1⁄2 Cup (8 tbs)
 Slivered crystallized ginger3 Tablespoon
 Thinly sliced green onion2 Tablespoon
 Lemon juice2 Tablespoon (Curry Dressing)
 Iceberg lettuce cups4 (Curry Dressing)

Directions

Place chicken in bowl.
Cube 2 pear halves; add pear cubes, nuts, cucumber, ginger and onion to chicken.
Add Curry Dressing; toss gently to mix.
Place each lettuce cup on individual salad plate.
Dip pear halves in lemon juice and arrange each half in 1 lettuce cup.
Spoon chicken mixture evenly onto pear halves.
Sprinkle with coconut, if desired.
