Indonesian Chicken And Pear Salad Recipe

| California bartlett pears | 3 , halved and cored (Fresh) | |
| Macadamia nuts/Peanuts | 1⁄2 Cup (8 tbs), coarsely chopped | |
| Cucumber slices | 1⁄2 Cup (8 tbs) | |
| Slivered crystallized ginger | 3 Tablespoon | |
| Thinly sliced green onion | 2 Tablespoon | |
| Lemon juice | 2 Tablespoon (Curry Dressing) | |
| Iceberg lettuce cups | 4 (Curry Dressing) |
Directions
Place chicken in bowl.
Cube 2 pear halves; add pear cubes, nuts, cucumber, ginger and onion to chicken.
Add Curry Dressing; toss gently to mix.
Place each lettuce cup on individual salad plate.
Dip pear halves in lemon juice and arrange each half in 1 lettuce cup.
Spoon chicken mixture evenly onto pear halves.
Sprinkle with coconut, if desired.
