Indonesian Chicken And Pear Salad Recipe

Ingredients

 
1 1/2 cups cubed cooked chicken
 
3 fresh California Bartlett pears, halved and cored
 
1/2 cup macadamia nuts or peanuts, coarsely chopped (optional)
 
1/2 cup cucumber slices
 
3 tablespoons slivered crystallized ginger (optional)
 
2 tablespoons thinly sliced green onion
 
Curry Dressing
 
Lemon juice
 
4 iceberg lettuce cups
 
Toasted shredded coconut (optional)

Directions

Place chicken in bowl.
Cube 2 pear halves; add pear cubes, nuts, cucumber, ginger and onion to chicken.
Add Curry Dressing; toss gently to mix.
Place each lettuce cup on individual salad plate.
Dip pear halves in lemon juice and arrange each half in 1 lettuce cup.
Spoon chicken mixture evenly onto pear halves.
Sprinkle with coconut, if desired.
