Ingredients
1/4 lb Cheddar cheese
1/3 cup shelled shrimp
1 1/2 X 1-inch cubes/1 oz Parmesan cheese
2/3 cup milk
1/4 cup all-purpose flour
2 tablespoons butter
salt and pepper
4 eggs, separated
a pinch of paprika
Directions
Grate the Parmesan cheese and Cheddar cheese separately .
Chop the shrimps finely .
Put the milk and flour into the processor bowl and mix well .
Melt the butter in a saucepan and stir in the milk mixture.
Season well and stir until the mixture comes to a boil, then cook for 2 minutes.
Cool slightly and return to the bowl with the egg yolks and grated Cheddar cheese.
Mix until smooth, turn into another bowl and stir in the chopped prawns.
Beat the egg whites to stiff peaks and fold into the mixture.
Divide between 4-6 greased individual souffle dishes, and sprinkle with the Parmesan cheese.
Put on a baking sheet and bake at 375°F for 25 minutes.
Sprinkle with paprika and serve at once.
