Directions

Follow recipe for Baked Alaska.
Decrease ice cream to 1 1/2 pints chocolate, strawberry, or vanilla.
Omit cake.
Chill 8 canned pineapple slices.
Pat dry with absorbent paper and arrange on a thick wooden board.
Quickly place 1 scoop of very firm ice cream in center of each slice.
Completely cover ice cream with meringue, spreading evenly.
Be careful to completely seal bottom edge to pineapple slice.
Set in a 450°F oven about 4 minutes, or until meringue is lightly browned.
