Individual Cherry Cheesecake Parfait Recipe Video
Ingredients
Dried Cherries - 6 ounces, 1 cup
Water - 1 cup
Granulated Sugar - 1/2 cup
Coarse Salt - 1/4 teaspoon
Cream Cheese - 6 ounces, softened
Part-Skim Ricotta - 3/4 cup
Pure Vanilla Extract - 1/2 teaspoon
Confectioner's Sugar - 1/4 cup
Amaretti Cookies - 8, coarsely chopped
Directions
MAKING
1. Combine cherries, water, granulated sugar and 1/8 teaspoon salt in a small saucepan over medium heat. 2. Bring to a simmer, and cook, occasionally stirring, for 20 minutes.
3. Let cool.
4. Meanwhile, blend cream cheese, ricotta, vanilla, confectioner's sugar and remaining 1/8 teaspoon salt in a food processor until smooth.
5. Divide cherries among 4 glasses, and then top each with ricotta mixture.
SERVING
6. Sprinkle tops with amaretti cookies and serve immediately.
