Indian Pudding Recipe
Ingredients
| Milk | 3 Cup (16 tbs) | |
| Yellow cornmeal | 1/2 Cup (16 tbs) | |
| Sugar | 1/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Ground cinnamon | 1 Teaspoon | |
| Ground ginger | 1/2 Teaspoon | |
| Egg | 1 , Well beaten | |
| Molasses | 1/2 Cup (16 tbs) | |
| Butter | 2 Tablespoon | |
| Cold milk | 1 Cup (16 tbs) |
Directions
Scald the 3 cups milk in the top of a double boiler.
Stirring constantly, slowly blend into milk a mixture of the cornmeal, sugar, salt, cinnamon, and ginger.
Stir in a blend of the egg and molasses.
Cook and stir over boiling water 10 minutes, or until very thick.
Beat in the butter.
Turn into a well-buttered 1 1/2 quart casserole.
Pour cold milk over top.
Bake at 300CF 2 hours, or until browned.

Hi Ranjita, this is more of an American Indian style pudding. But surely you will love it. There are many more such wonderful recipes suggested on the right hand side of the recipe page. Do take a look. You can also look for phirni or firni recipes, made with rice flour instead of cornmeal.
