Indian Curry Muffins Recipe
Indian Curry Muffins is a yummy muffin that will definitely be a winner at the next party you host. I served these unique Indian Curry Muffins last week for my in- laws and they loved it. Don’t miss this one out.
Ingredients
1 Cup All-Purpose Flour
1/2 Cup Whole Wheat Flour
1/2 Cup Sugar
11/2 Tsp. Baking Powder
1/2 Tsp. Soda Pinch Salt
3/4 Tsp. Curry Powder
1/3 Cup Raisins
2/3 Cup Dried Apples, Diced
1 /3 Cup Chopped Nuts
2/3 Cup Shredded Coconut
1 Egg
1 1/4 Cups Buttermilk
3 Tbsp. Butter, Melted
Directions
Mix flour, whole wheat flour, sugar, baking powder, soda, salt and curry powder.
Blend in raisins, apples, nuts and coconut.
In another bowl, whisk egg, buttermilk and melted butter.
Add quickly to dry ingredients.
Spoon batter into greased muffin cups and bake until lightly brown.
Bake at 400 degrees 15-20 minutes
