Ingredients

 
Chicken -3 pieces (leg and thigh)
 
Turmeric- 1 1/2 teaspoons
 
Salt - to taste
 
Pepper - to taste
 
Freshly ground ginger garlic paste - 1 tablespoon
 
For the marinade:
 
Thick yogurt - 1 cup (Greek yogurt will work best)
 
Tandoori masala powder - 3 teaspoons
 
Salt - to taste
 
Red food color

Directions

GETTING READY
To prepare the chicken.
1. Gash the bird all over with a sharp knife so that the marinade penetrates into it.
2. Coat the meat with 1 teaspoon of turmeric and wash well. The anti bacterial property of turmeric helps to sanitize the meat.

MAKING
3. Place chicken in a large bowl or pan.
4. Season with salt and pepper powder rubbing it well in the chicken
5. Add ginger garlic paste and massage it into the meat
To prepare the marinade
6. In one cup of yogurt add 3 tsp of tandoori masala powder. You can add more to your taste.
7. Add salt as per taste keeping in mind that the chicken has already been seasoned.
8. Add 3 drops of red food color and whisk everything well to make a smooth paste.
9. Pour the marinade over the meat and coat thoroughly.
10. Cover the bowl with plastic wrap and refrigerate overnight or for a minimum of 4 hours.

FINALIZING
11. Cook the chicken pieces for 30- 40 min under a broiler or over a hot charcoal grill until tender.

SERVING
12. Serve with your favorite side dish and accompany with lemon wedges, onion rings, and green mint chutney is you like.
