Indian Summer Chicken and Rice Salad Recipe
Ingredients
| Water | 2 Cup (16 tbs) | |
| UNCLE BEN'S Brand Instant Rice - 2 cups | ||
| Zucchini | 1/2 Cup (16 tbs), thinly sliced | |
| Yellow summer squash | 1/2 Cup (16 tbs), thinly sliced | |
| Boneless, skinless chicken breasts - 4 (about 1 pound) | ||
| Creamy Italian salad dressing - 2/3 cup , divided | ||
| Tomatoes | 2 | |
Directions
MAKING
1 In a pan, bring water to a boil.
2 Add in rice, zucchini and summer squash.
3 Remove from the heat and allow to stand for 5 minutes.
4 Let cool.
5 Meanwhile, brush the chicken with 2 tablespoons salad dressing.
6 Grill or broil for 20 to 25 minutes or until the chicken is no longer pink in center, turning once.
7 Diagonally slice the chicken.
8 In a bowl, combine the rice mixture with the remaining salad dressing.
SERVING
9 Transfer to a serving platter and serve surroundded with tomatoes and topped with chicken.
