Indian Pulled Chicken Sandwiches Recipe
Ingredients
| 3/4 cup plain whole-milk yogurt | ||
| Mango chutney | 3/4 Cup (16 tbs) | |
| Lime juice | 2 Tablespoon | |
| 2 teaspoons mild curry powder | ||
| 1 small rotisserie chicken, meat shredded, skin and bones discarded | ||
| Scallions | 2 , thinly sliced | |
| 1/2 cup cilantro leaves, coarsely chopped | ||
| Kosher salt and freshly ground pepper | ||
| 1 cup baby arugula leaves | ||
| 4 brioche rolls or other rolls, split | ||
Directions
In a food processor, pulse the yogurt, mango chutney, fresh lime juice and curry powder until the mixture is blended but not completely smooth.
Scrape the yogurt mixture into a medium bowl, add the shredded chicken meat, sliced scallions and chopped cilantro and toss.
Season the pulled chicken salad with salt and pepper.
Lay the arugula on the rolls, spoon the chicken salad on top and serve.
