Ingredients

 
1 1/4 pounds lamb, boned
 
1 large yellow onion
 
2 cloves garlic, finely chopped
 
3 tablespoons salad oil
 
2-3 teaspoons curry powder
 
Salt Pepper
 
1-pound can whole tomatoes
 
2 teaspoons coriander
 
1 teaspoon turmeric
 
1 cup chicken stock
 
1/2 teaspoon ginger
 
4 ounces plain yogurt
 
1 tablespoon butter
 
3 slices unsweetened pineapple, cubed

Directions

1. Cut meat in 1-inch cubes. Peel and chop the onion.
2. Brown onion, meat, garlic, curry, and oil in casserole. Salt and pepper lightly. Add tomatoes, spices, and stock.
3. Simmer the casserole covered for about 45 minutes, stirring occasionally.
4. Saute the pineapple lightly in butter. Stir in the yogurt and pineapple.
