Ingredients

 1 large cooking apple
 Onion1
 Buttermilk1/2 Cup (16 tbs)
 Milk1/4 Cup (16 tbs)
 1/4 cup mild curry powder
 Sugar1 Tablespoon
 White wine3 Tablespoon
 Oil1/4 Cup (16 tbs)
 Vinegar2 Tablespoon
 Mayonnaise2 Tablespoon
 Hot water2 Tablespoon
 Chives3 Tablespoon, chopped

Directions

Peel and core the apple, then slice.
Peel and finely chop the onion.
Put the apple, onion, buttermilk, milk, curry powder, sugar and white wine in a sauce- pan.
Bring to the boil and simmer for 15 minutes.
By this time, the apple should be a puree.
Remove from the heat.
Beat in the oil, vinegar, mayonnaise, then the hot water.
Allow to cool, then add the chives.
This sauce can be served with fish salads, chicken or turkey salad, shellfish appetizers, and pasta salad.
