Ingredients
| Vegetable oil | 1 Tablespoon | |
| Onion | 1 Large, chopped | |
| 1 tsp finely grated fresh root ginger | ||
| Garlic | 1 Clove (5gm), chopped | |
| Garam masala | 1 Tablespoon | |
| 850 ml/1 1/2pts vegetable stock | ||
| 2 large carrots, quartered lengthways and chopped | ||
| 400 g/14 oz can chickpeas, drained | ||
| 100 g/4 oz green beans, chopped | ||
Directions
GETTING READY 1) Arrange all the ingredients. MAKING 2) In a medium saucepan, heat the oil and add onion and giner-garlic. 3) Fry the onion mixture for around 2 minutes and add garam masala. Fry for further 1 minute. 4) Add stock with carrots. Simmer for approximately 10 minutes and add chickpeas. 5) With a stick blender, whizz the soup. 6) Mix the beans in the soup and cook on low heat for 3 minutes. FINALIZING 7) In the flask, pack the soup and chill. SERVING 8) Reheat the soup and enjoy with naan bread.
