India Date Bran Muffins Recipe
Ingredients
1 Egg
11/3 Cup Milk
1/4 Cup Melted Salt Free Butter
11/3 Cup Bran Cereal
1 1/2 Cup Chopped, Pitted Dates
1/3 Cup Pecans
1 3/4 Cups All Purpose Flour
1 Tbsp. Baking Powder
1/3 Cup Sugar
Directions
Whisk the eggs with the milk and melted butter.
Pour over bran cereal and let stand.
In another bowl, combine dates, nuts, flour, baking powder and sugar.
Add to wet ingredients, stirring together quickly, and spoon into greased muffin tins.
The muffins will rise around the edges first as the batter is thin, but as the dates become warm the batter will rise into delicious breakfast or tea-time muffins.
Bake at 375 degrees about 20 minutes
