India Relish Recipe
Ingredients
| Chopped tomatoes | 3 Quart, peeled | |
| Celery | 3 Cup (16 tbs), chopped | |
| Onions | 2 Cup (16 tbs), chopped | |
| Salt | 1/4 Cup (16 tbs) | |
| Vinegar | 1 Quart | |
| Brown sugar | 3 Cup (16 tbs) | |
| Mustard seed | 1/3 Cup (16 tbs) | |
| Red peppers | 2 Cup (16 tbs), chopped | |
| Cinnamon | 1 Teaspoon | |
| Allspice | 3/4 Teaspoon | |
| Cloves | 3/4 Teaspoon |
Directions
Allow the tomatoes, celery, onions and salt to stand for 2 hours.
Drain thoroughly.
Add remaining ingredients and cook until the mixture is thickened.
Fill hot jars, leaving 1/4-inch head space.
Adjust caps.
Process 15 minutes in boiling water bath.
