Impossible Coconut Pie Recipe
The impossible coconut pie is prepared with eggs milk, sugar and flour with coconut and vanilla for flavor. Made without any crust, the impossible coconut pie is simply baked till a pie crust forms on the top.
Ingredients
| Eggs | 4 standard | |
| Milk | 2 Cup (16 tbs) | |
| Vanilla | 1 Tablespoon | |
| Melted margarine | 1/4 Cup (16 tbs) | |
| Sugar | 1 3/4 Cup (16 tbs) | |
| Self rising flour | 1/2 Cup (16 tbs) | |
| 1 7 oz. pkg. flaked coconut | ||
Directions
In a large mixing bowl, beat together the eggs, sugar, milk, vanilla, flour and margarine until all ingredients are well combined.
Fold the coconut into this mixture.
Turn into 2 greased and floured 9 inch pie pans.
Bake in preheated 350° oven for 40 minutes or until golden brown.
Crust forms as pie bakes.
