Imperial Eggs Recipe

Ingredients
| Egg yolks | 6 | |
| Chicken stock | 2 Cup (16 tbs) | |
| Sherry | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Water chestnuts | 1/2 Cup (16 tbs), chopped | |
| 4 slices Smithfield ham, chopped fine | ||
| Cornstarch | 2 Tablespoon | |
| Water | 4 Tablespoon | |
| Oil | 4 Tablespoon | |
Directions
Beat the egg yolks and add slowly to the stock.
Add the sherry, salt, water chestnuts and half the ham and beat well.
Mix the cornstarch with the water and add to the egg mixture.
Stir vigorously.
Heat a pan with the oil and when it boils, pour in the egg mixture and stir constantly till it becomes thick and smooth.
Pour into a shallow bowl and sprinkle with the remaining chopped ham.
Serve immediately.
