Imperial Chicken Salad Recipe
Ingredients
| 12 ounces cooked chicken, cut in strips | ||
| 4 medium potatoes, cooked, peeled, and sliced | ||
| 3 hard-cooked eggs, sliced | ||
| Dill pickle | 1/2 Cup (16 tbs), chopped | |
| Celery | 1/2 Cup (16 tbs), chopped | |
| Onion | 1 Tablespoon, grated | |
| Capers | 1 Tablespoon, drained, rinsed | |
| 3/4 cup mayonnaise or salad dressing | ||
| Lemon juice | 1 Tablespoon | |
Directions
In large bowl combine chicken, potatoes, sliced eggs, pickle, celery, onion, capers, and 1 teaspoon salt.
Blend together mayonnaise or salad dressing and lemon juice; stir mayonnaise mixture into salad.
Chill.
