Recipe Story

The Idli is a great tasting breakfast and snack dish that is very popular in South India. Breaking the geographical barriers is what great food can do. Rightly so, the idli now is a popular dish on the menu of most Indian restaurants. A easy and quick recipe that is done in 15 minutes. Enjoy!!

Ingredients

 
Rice – 2 cups
 
Urad dal ( a lentil ) – 1 cup
 
Cooked rice – 1 cup
 
Salt – to taste

Directions

Soak the raw rice and urad dal overnight in water. Wash and clean. Grind the two in the mixer alongwith the cooked rice. The batter must be of slightly thick consistency for making idlis. Add salt to taste and mix. Keep for 12 hours for fermenting. When the batter has fermented and risen well it is right for making spongy idlis that will melt in your mouth. Pour the batter into theidli mould and steam for 10-15 minutes. Enjoy a healthy breakfast with idlis served with delicious chutney and sambar.

I use regular rice and not idli rice or boiled rice in this recipe. I am sure you would enjoy the spongy delicious idlis

Thanks vikas. Once this batter is ready you can make idlis whenever you feel like and all it takes is 15 minutes. You can make crispy dosas with the same batter (add a little more water to the batter for pouring consistency). This batter would make you atleast 30 idlis and you can store for a week in the refrigerator.

Idli is an extremely nice n light snack. I've never cooked one at home but often had it home delivered from various restaurants. Then there's one 'thela' wala outside my office in worli and a 'cycle' wala outside mindspace in malad... 2 guys who make extremely 'spongy' idlis and have quite a few regulars.
