Icy Watermelon Soup Recipe

I got to try out this Icy Watermelon Soup at my friend's place. My GOD, It was simply mind blowing! I just love Appetizer recipes and this dish is my only favorite amongst them. Fruits is the primary ingredient in Icy Watermelon Soup. I am sure you and I will approve that this Icy Watermelon Soup is really delicious.

Ingredients

 
1/2 medium watermelon
 
1 to 1-1/2 cups Rhine wine
 
2/3 cup sugar
 
3/4 cup water
 
4 slices lemon or lime
 
One 2-inch piece vanilla bean
 
Finely minced fresh mint

Directions

Scoop 12 balls from seedless portion of watermelon.
Combine with wine and chill.
Cube remaining watermelon, remove seeds and set aside.
Simmer sugar, water, lemon slices and vanilla bean, covered, 20 minutes.
Discard lemon slices and vanilla bean.
Put 2 cups watermelon cubes in blender or food processor; pour in sugar water and blend until smooth.
Chill, combine with melon balls and wine and adjust to taste.
Sprinkle with mint.
