Icelandic Pancakes Recipe
Ingredients
1 c. flour
1 tbsp. sugar
1/4 tsp. baking powder
Dash of salt
1 egg, well beaten
1 tbsp. butter, melted
1 tsp. vanilla
1 c. milk
Confectioners' sugar
Strawberry preserves
Whipped cream
Directions
"Sift dry ingredients; add egg, butter, vanilla and milk.
Beat until smooth.
Pour small quantity of bat- ter onto hot griddle; tilt griddle to spread batter thinly.
Cook on both sides until lightly browned; remove.
Cover lightly with confectioners' sugar.
Stack next pancake on top; sprinkle with sugar.
Place strawberry preserves in center of pancake; roll..
