Iced Avocado Soup Recipe
Ingredients
3 ripe avocados, peeled, stoned (seeded) and mashed
Juice 1/2 lemon
Salt and pepper
300 ml (1 pint) (1 cup) chicken stock
Toasted croutons to garnish
Directions
1 Mix the avocado, lemon juice, and seasoning with enough stock to give a smooth consistency.
Chill well.
2 Serve garnished with crisp croutons.
