Iced Apple Soup Recipe
Ingredients
| 2 red cooking apples, peeled, cored, and quartered | ||
| Granny smith apples | 2 Medium, quartered | |
| 2 cups unsweetened apple juice | ||
| Lemon juice | 2 Tablespoon | |
| Lime juice | 1 Tablespoon | |
| Cinnamon stick | 2 | |
| Vanilla extract | 1 Teaspoon | |
| 2 cups unsweetened pineapple juice | ||
| Skim milk | 2 Cup (16 tbs) | |
| 2 tablespoons apple brandy | ||
| 14 cup plus 3 tablespoons shredded red cooking apple | ||
Directions
Combine first 6 ingredients in a large saucepan; bring to a boil.
Cover; reduce heat, and simmer 20 minutes or until apples are very soft, stirring occasionally.
Remove from heat, and stir in vanilla.
Cool; cover and refrigerate overnight.
Discord cinnamon stick; place apple mixture in container of an electric blender.
Process until smooth.
Add pineapple juice and milk; process until blended.
Stir in apple brandy.
Cover and chill thoroughly.
Pour into individual bowls; top each serving with 1 tablespoon shredded cooking apple.
