Ingredients

 Onion1
 Butter1 Ounce
 Cornflour1 Ounce (Curry paste -1/2-1 tablespoon)
 Beef bouillon or chicken cubes -2
 Water2 Pint (Curry paste -1/2-1 tablespoon)
 Seasoning
 Bay leaf1 (Curry paste -1/2-1 tablespoon)
 Lemon rind - as required
 Thin cream -1/4 pint
 Grated lemon rind - as required

Directions

MAKING
1)In melted butter add chopped onion and cook till soft, but let it not brown.
2)Add curry paste and cornflour to the mixture stirring it constantly.
3)Add chicken cubes and water and let it boil adding seasoning into it.
4)Further put bay leaf and a strip of lemon rind in the mixture and let it simmer for 10 minutes.
5)After sometime remove bay leaf and lemon rind from the soup and let it cool.
6) Spoon some cream over the soup and keep it in the freezer.
7)Garnish it with grated lemon rind.
SERVING
8)This delicious Iced Curry Soup can be served with a thai dish.
