Ice cream cake roll Recipe

This ice cream cake roll is a very easy to make dessert. Unlike the look which gives a feel of a tough and time consuming cooking project at hand. This is one that even a beginner can try and succeed with ease.

Ingredients

 
All purpose flour – ¾ cup
 
Baking powder- 1 tsp
 
Salt – a pinch
 
Sugar -3/4 cup
 
Eggs-3
 
Vanilla essence – 4 to 5 drops
 
Confectioners’ sugar – 2 tbsp
 
Water -1/3 cup
 
2 cups strawberry ice- cream (I like strawberry ice-cream so decided to do it with that, you can use the ice cream of your choice.
 
½ cup chopped fresh strawberries

Directions

Mix all the dry ingredients (flour, baking powder and salt) together and keep aside. Take another bowl, add in the eggs and beat well. Now add the sugar, water and vanilla essence and blend well with a hand blender. Fold in the dry ingredients mixture little by little. Pour the batter in a 15x10 pre-greased baking pan. Bake in a pre-heated oven at 375 degrees for 12-13 minutes. Take out when done and put on a towel dusted with confectioners’ sugar. Roll into a jelly roll on the towel and place on wire rack. Let cool. Open. Spread the softened strawberry ice cream on the cake and sprinkle with the chopped strawberries. Roll. Cover with a plastic wrap and refrigerate till you want to serve.
