Ice Cream Fiesta Recipe
Ingredients
| 1/2 kg pineapple sponge cake | ||
| 1 brick vanilla ice cream | ||
| 2 tbsp orange marmalade or jam | ||
| 1 big apple peeled, cut into small flat pieces | ||
| Water | 1/2 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Lemon juice | 1/2 Teaspoon | |
| 1/2 cup strawberry sauce | ||
Directions
Split the cake into two equal halves.
Spread 1 tbsp of marmalade on each piece.
Boil 1/2 cup water with 2 tbsp sugar & lemon juice.
Add apple pieces.
Cook for 2 minutes till apples turn soft.
Cool.
Strain apple pieces, reserving the syrup.
In the empty cake tin put the 3/4 of softened ice cream.
In the left over ice cream mix apples.
Place a piece of cake on the ice cream in the tin.
Soak the cake with apple syrup.
Spread apples in ice cream over the cake.
Press the other piece of cake on it.
Soak with syrup.
Cover with aluminium foil & freeze for 6-8 hours.
This can be kept for a few days.
Prepare strawberry sauce.
Unmould-1 hour before serving.
Make swirls of strawberry sauce on the ice cream.
Freeze again.
