| Yellow onion | 1 Tablespoon, minced | |

| Buttermilk | 1 Cup (16 tbs) | |

Directions
Begin heating fat in a deep fat fryer; use a deep fat thermometer.
Stir corn meal, sugar, soda, and salt together to mix.
Place onion in a small bowl, add egg and buttermilk, and beat until frothy; pour all at once into meal and stir lightly to mix.
Add just enough water to make dough a good dropping consistency—it should be about the same as drop biscuit dough.
When fat reaches 375° F. scoop up rounded 1/2 tablespoons of dough, shape lightly on end of spoon to smooth out rough edges, drop into fat, and fry about 2 minutes until evenly browned.
Drain quickly on paper toweling and serve—hushpuppies should be sizzling hot.
