Buttermilk Hush Puppies Recipe

Hush puppies are fried egg and flour items prepared along with buttermilk, cornflour, sugar and baking soda. Cooked in melted shortening, the hush puppies may be served as a side in a meal.

 Egg1 , beaten
 1/2 cup buttermilk or sour milk
 1/4 cup finely chopped green onions
 Water1 Tablespoon
 Cornmeal3/4 Cup (16 tbs)
 All purpose flour1/4 Cup (16 tbs)
 Sugar2 Tablespoon
 Baking powder1 Teaspoon
 Baking soda1/4 Teaspoon
 Salt1/8 Teaspoon
 Shortening or cooking oil for deep fat frying

Directions

In a small mixing bowl stir together egg, buttermilk or sour milk, green onions, and water.
In a medium mixing bowl combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
Add egg mixture to dry ingredients.
Stir just till moistened.
In a heavy saucepan or deep fat fryer heat about 2 inches melted shortening or oil to 375°.
Drop batter by tablespoons into hot fat.
Fry a few at a time, about 2 minutes or till golden brown, turning once.
Drain on paper towels.
Keep warm in a 325° oven while frying remainder.
