Ingredients

 
2 pounds lean beef (rump, round, etc.), cubed
 
1/2 cup flour seasoned with 1/2 teaspoon salt
 
Freshly ground black pepper
 
3 tablespoons butter
 
2 medium sized onions, finely chopped
 
1 cooking apple, peeled, cored and finely chopped
 
1/2 cup red wine
 
3/4 cup beef broth
 
2 bay leaves
 
4 peppercorns, crushed
 
4 juniper berries, crushed
 
2 cloves
 
4 medium sized potatoes, peeled, boiled and mashed
 
2 tablespoons butter, melted

Directions

Roll the beef cubes in seasoned flour.
Heat the butter in a heavy casserole.
Add the beef cubes and brown quickly over high heat.
Add the onions and apple and cook for 3 to 4 minutes over medium heat.
Add wine and broth and cook for a few minutes, scraping up the brown bits clinging to the bottom of the pan.
Add the bay leaves, peppercorns, juniper berries and cloves.
Reduce the heat, cover and simmer slowly 1 1/2 hours or until the beef is tender.
Strain the sauce and place the meat and vegetables in a shallow ovenproof serving dish.
Spread the mashed potatoes in a layer on top of the meat and pour on the melted butter.
Bake in a preheated 425° oven for 15 minutes or until the potatoes are brown.
