1 4-4 1/2-pound fryer chicken,cut into 8 pieces
 
1 small Spanish or yellow onion, sliced
 
3 cloves garlic, chopped, pressed, or thinly sliced
 
1 28-ounce can whole tomatoes, chopped, with juice
 
1 tablespoon chopped fresh thyme or 1-2 teaspoons dried
 
1 tablespoon chopped fresh rosemary or 1-2 teaspoons dried
 
Salt and pepper
 
OPTIONAL INGREDIENTS
 
2 carrots, chopped
 
2 stalks celery, chopped
 
1 red or orange bell pepper, chopped
 
1/2-1 ounce dried porcini mushrooms, chopped

Directions

1. Heat a large nonstick or cast-iron skillet over medium-high heat. Add the chicken pieces and cook for about 3-5 minutes per side, or until the skin has browned. Remove the chicken pieces and set aside. Discard all but 1 tablespoon of fat from the pan.
2. Add the onion and garlic, carrots, celery, and pepper, if you are using them, and cook over medium-low heat for 10-15 minutes, or until the vegetables are golden. Add the tomatoes and the optional mushrooms and cook for 5 minutes. If you are using dried herbs, put them in now.
3. Add the chicken and cook over low heat for about 20 minutes.
4. If you are using fresh herbs, put them in now. Add salt and pepper to taste, and serve.
