5 trout
1 3/4 lb. potatoes
3 oz. butter
Salt
1 oz. flour
Small bunch of parsley
Rolls
Red paprika
Directions
Salt the cleaned trout.
Mix the flour with some red paprika.
Cut the peeled potatoes and cook in salted water, timing them so that they are ready.
Remove the stalks of the parsley, wash and squeeze it out and chop.
A quarter of an hour before serving heat 3 oz.
of butter in a large saucepan, and put in the trout, first rolling them in the flour and paprika.
Fry on both sides and then put in a hot oven and cook a further few mins.
