Hungarian Goulash Recipe

Ingredients

 
2 pounds stewing beef
 
1 tablespoon bacon drippings or fat
 
5 tablespoons flour
 
1 small onion, peeled and sliced
 
1 tablespoon Worcestershire sauce
 
2 teaspoons salt
 
1 teaspoon paprika
 
1 teaspoon caraway seeds (optional)
 
1/8 teaspoon pepper
 
3 1/2 cups hot water
 
1 /2 cup sour cream

Directions

Cut meat into neat 1-inch cubes.
Melt fat in heavy skillet.
Brown meat cubes on all sides; sprinkle with flour, and stir again to brown further.
Add onion, Worcestershire sauce and dry seasonings.
Add hot water, and continue stirring.
Reduce heat, cover tightly and simmer until meat is very tender—about 2 hours.
Stir in sour cream just before serving.
Drained boiled noodles are a traditional accompaniment with the spicy goulash
