Ingredients

 
3 medium potatoes
 
1 lb (500 g) cod or halibut steaks
 
Salt and pepper to taste
 
1 1/2 cup (375 mL) onions, thinly sliced
 
4 to 6 bacon slices
 
Juice and rind of a small lemon
 
2/3 cup (160 mL) sour cream
 
Salt and pepper to taste
 
1/4 cup (60 mL) sour cream
 
1/2 tsp (2 mL) paprika

Directions

Wash and scrub the potatoes, make 2 or 3 incisions in the peel with the point of a knife.
Place the potatoes in a circle on a microwave rack.
Microwave 8 to 9 minutes at HIGH.
Check done-ness with the point of a knife.
If necessary, micro wave 1 or 2 minutes more.
When cooled, peel the potatoes, slice them and place them in an 8 x 8-inch (20 x 20 cm) well-buttered microwave-safe dish.
Salt and pepper to taste.
Place the onions in another dish, without fat.
Microwave 3 minutes at HIGH, stirring after 2 minutes of cooking.
Remove from microwave.
Place the bacon on two layers of paper towel, cook 3 or 4 minutes at HIGH or until crisp.
Some bacon may require only 2 minutes of cooking.
Crumble the bacon.
Place the fish steaks over the potatoes.
Sprinkle with the lemon juice and the rind, then with the onions, and finally with the crumble bacon.
Cover it all with the 2/3 cup (160 mL) sour cream.
Salt and pepper to taste.
Cover the dish and microwave at HIGH approximately 8 minutes or until the fish flakes.
Mix the remaining sour cream with the paprika.
Spread over the cooked fish, cover and microwave 1 more minute at HIGH.
