Large potatoes - 4
 
Hard boiled eggs - 4
 
Scullions - 2
 
Mayonnaise - 1/2 cup
 
Sour cream or smetana - 1/4 cup
 
Salt
 
Pepper

Directions

GETTING READY
1 Peel the potatoes.
2 Cut them into small pieces.

MAKING
3 In a saucepan, put the potatoes with 2 1/4 cups water and 1 tsp salt.
4 Cover and cook over low to moderate heat.
5 Bring to boil and simmer for about 15-20 minutes or until the potatoes are tender and have absorbed all the water.
6 Chop the hard boiled eggs coarsely.
7 Trim the scallions, removing the outer layer.
8 Slice the bulb and leaves into rings.
9 Using a fork, partially break up the hot, cooked potato pieces.
10 Allow to cool at room temperature.
11 In a bowl, add the mayonnaise and stir in 1/4 cup sour cream.
12 Mix with the potatoes, the scallions, and chopped eggs.
13 Season with salt and freshly ground pepper to taste.

SERVING
14 Serve at once
