Ingredients

 
2 recipes of dai bao dough
 
1 cup cauliflower finely minced
 
1 cup carrots finely grated
 
2 spring onions finely chopped
 
2 eggs beaten (optional)
 
2 Chinese mushrooms (soaked in water for 30 minutes)
 
1 tsp. ginger, grated
 
1 tsp. garlic, crushed
 
3 tbsps. peanut oil
 
1 recipe of chilli-garlic sauce
 
Seasonings
 
2 tbsps. soya sauce
 
2 tbsps. sesame oil
 
2 tsps. salt
 
1 tbsp. chilli sauce
 
1 tsp. sesame paste
 
1/2 tsp. pepper, ground
 
2 tbsps. cornflour

Directions

Wash and dry the mushrooms and mince finely.
Heat oil in a pan.
Saute onions, ginger, garlic, for 1 minute.
Add carrot, cauliflower and mushroom and fry for 5 minutes.
Add all the seasoning except cornflour.
Remove from heat, sprinkle cornflour.
Add beaten eggs and mix well.
Now proceed as in Chai Dim Sim from stage 6 to 8.
VARIATION:
Hunan Dai Bao with Meat:
Omit cauliflower and carrots.
Add one cup minced meat instead and proceed as directed above.
