Hunan Eggplant Recipe
Ingredients
| Eggplant | 1 1/2 Pound | |
| Canola oil | 1 Tablespoon | |
| Ginger root | 1 Teaspoon, peeled | |
| Garlic | 2 Clove (5gm) | |
| Lemon juice | 1 Tablespoon | |
| Low-sodium soy sauce - 1 teaspoon | ||
| Honey | 1 Teaspoon | |
| Sesame oil | 1 Teaspoon | |
Directions
GETTING READY
1) Slice eggplant into 1-inch chunks.
MAKING
2) In a pan heat water and add eggplant.
3) Steam for about 12 minutes.
4) In a large nonstick frying pan heat canola oil over medium heat.
5) Stir in ginger and garlic.
6) Sauté for about 3 minutes.
7) Mix lemon juice, soy sauce, honey, and sesame oil.
8) Add the eggplant and toss.

9) Serve hot.
