Huevos Rancheros Recipe
Ingredients
| Olive oil | 2 Teaspoon | |
| Onion | 1/4 Cup (16 tbs), diced | |
| Green pepper | 1/4 To taste | |
| Garlic | 1 Clove (5gm), minced | |
| Tomatoes | 1 Cup (16 tbs), chopped | |
| Ground pepper | 1 To taste | |
| Dried basil | 1/4 Teaspoon, crushed | |
| Eggs | 2 |
Directions
MAKING
1 In a medium frying pan, heat oil.
2 Add onion and green pepper and saute until onion becomes translucent.
3 Add garlic, tomato, and seasonings.
4 Cook over low heat for 2 minutes and stir constantly.
5 Using a spoon make two hollows in the sauce and crack eggs in them.
6 Cover and cook until eggs are set.
SERVING
7 Serve hot.
