Ham Huevos Rancheros Recipe
|Olive oil||2 Tablespoon|
|Garlic||1 Clove (5 gm), crushed|
|Onion||1 , finely chopped|
|Green pepper||1 , cored, seeded and finely chopped|
|Tomatoes||1 Pound, peeled and chopped (450 Gram)|
|Cayenne pepper||1⁄2 Teaspoon|
|Ham slices||4 , cut into strips|
|Eggs||4 , fried and kept hot|

Add the garlic, onion and pepper and fry for 5 minutes.
Add the tomatoes, cayenne pepper and salt and pepper to taste.
Simmer the mixture uncovered, stirring occasionally, until it is thick.
Stir in the ham.
Spoon the mixture onto a heated serving plate.
Arrange the fried eggs on top and serve.
