• 1 tbsp cooking oil
• 2 tbsp red curry paste/phanaeng curry paste
• 1 can, 13 ½ fl oz coconut milk
• 1-2 lb. chicken pieces
• 1 tbsp palm sugar/ white sugar or brown sugar
• 2 tbsp fish sauce
• 3 slices of galangal
• 5 kaffir lime leaves
• bamboo shoots (can be substituted with vegetables of your choice)

Directions for preparation:
• Heat oil in a wok and add the curry paste.
• Sauté it for some time.
• When it begins to absorb the oil add the coconut milk. Mix well.
• Add in the chicken.
• Add in the galangal and kaffir lime leaves.
• Cook the chicken till it is done (5-7 minutes)
• Add the sugar. Mix.
• Add the fish sauce and stir it in.
• Add the bamboo shoots and bring it to boil.
• Turn off the heat and garnish with Thai basil.
• Serve with rice.
