 Cucumbers2 Pound, peeled seeded and thinly sliced
 Jalapeno1 , seeded and minced
 Scallions3 , thinly sliced diagonally
 Fresh cilantro1⁄4 Cup (4 tbs), minced
 Peanuts3⁄4 Cup (12 tbs), roughly chopped

Directions

MAKING
1. In a blending jar add in the lemon grass, sugar, curry powder, garlic, salt and brown rice vinegar. Blend for few minutes.
2. In a medium bowl add in the cucumbers, jalapeno, scallions, and cilantro.
3. Pour in the dressing and mix well. Let the salad marinate for 15 to 20 minutes.

SERVING
4. Garnish Cucumber Salad with peanuts and serve.

Just a tip - I can't always find fresh lemongrass in my supermarket, so prefer to use Gourmet Garden lemongrass paste. It's sold in the fresh produce department at Safeway and lots of other supermarkets. The tube has plenty of servings and is already prepared for me, which saves a lot of preparation time.
