Red bean cake is a cuisine from Asia. It is basically mashed sweet red bean paste which is used as a filling. This cake is made with azuki beans in Japan and China. Chinese serve this cake during the traditional holidays.

1 c cooked red beans
1 tbsp oil
Water as per need
1 package pre made mini pancakes
1 tbsp sugar
Directions
1. Recook the red beans and simmer for about an hour.
2. Mash the beans to an almost smooth paste
3. Add sugar and mix it well into bean paste.
4. Add some water and mix.
5. Re fry the bean paste until wet and mushy.
6. Mash or blend the re-fried paste.
7. Spread the bean paste on one side on mini pancakes and cover it with other.
8. Serve.
