Ingredients

 
Small pot of boiling water for noodles
 
1/3 cup of almonds (or any other nut you have)
 
A few lettuce leaves
 
A few sprigs of parsley
 
1 egg
 
1 bundle of soba noodles
 
Half avocado
 
4 shrimp
 
Preshredded dried nori
 
1 pack of rice sheets
 
Dipping Sauce:
 
4 tbsp hoisin sauce
 
3 tbsp peanut butter
 
1-2 tbsp of milk

Directions

First put a small pot of water on the stove and set it on high to boil. Then take a 1/3 cup of almonds or
any other nut you have and roast them on high in a small frying pan on the stove for 3 minutes. While
the nuts are roasting go ahead and cut thin slices of lettuce, we use 3 or 4 large leaves. Then chop up
some parsley and set aside.
The almonds are done now and can be put in the food processor to grind them up. Set the ground nuts
aside in a small bowl.
Take 1 egg and crack in a small bowl and add a little salt and pepper, then whisk. Use the same frying
pan from roasting the nuts and give it a quick spray with cooking oil and pour the egg into the pan on
medium heat covered for 3 minutes. The water should be boiling at this point so go ahead and throw in
the soba noodles for 3 minutes. When the egg is ready uncover and flip it in the pan and let it cook for
another minute uncovered. Then take the cooked egg and cut into slices and set aside.
The noodles will be done and can be drained, have a bowl of ice water set aside to cool the noodles in
while you prepare the rest of summer rolls. Once the noodles are cooled place them on a plate and set
aside.
Now we are going to make the dipping sauce, use the frying pan from earlier on low to medium heat
and add 4 tbsp of hoisin sauce and 3 tbsp of peanut butter. Mix them together well and then add 1-2
tbsp of milk depending on how thick you want your dipping sauce. Then place in a bowl and set aside.
Take half an avocado and cut into thin slices. We cut the avocado in the skin and then squeeze the slices
out afterwards. We can prepare the shrimp now, peel the skin off and devein. The shrimp only need boiling for 2
minutes and then they can be rinsed and chopped up.
Now we can start to assemble our specialty summer rolls since everything has been prepared. Take a
rice sheet and gently dip into luke warm water several times. Don't worry the rice sheet will continue to
soften after you take it out of the water. Now you can add all the ingredients. We make ours by adding
the soba noodles, parsley, lettuce, avocado, almonds, egg, nori, and shrimp in the middle of the rice
sheet and then folding the bottom third up and over the ingredients. Then fold the sides in and roll up
the rest of the way. Repeat the process and eat as many as you like, don't forget to dip them in the
yummy sauce you made!
