Classic Shrimp Cocktail Recipe Video

MAKING
1) In a pot of cold water, add the onion, garlic, lemon, bay leaf, peppercorns, tarragon leaves, Old Bay and salt.
2) Put the mixture over high heat and stir well till the ingredients are simmering. Let the mixture simmer for about 15-20 minutes to blend together all the flavors.
3) To make the cocktail sauce, mix together the horseradish, chili sauce, ketchup, hot sauce, salt, lemon juice and Worcestershire sauce. Stir well till smooth and place in the fridge.
4) In the poaching liquid that is rapidly boiling, put the shrimp and cook for about 5 minutes.
5) As soon as the cooking time is over, remove the shrimps from the poaching liquid and put then in ice cold water.
6) Once the shrimps are cold, strain them and peel them if preferred.
SERVING
7) Put the cooked, cold shrimps on a serving plate and serve with the fresh, cold cocktail sauce.

I am a great fan of seafood cocktail and the one such recipe I still relish is the cocktail served at one of the resorts in maldivesl it was just heavenly. However, I would prefer slightly smaller variety of shrimp for the preparation and does this recipe leave a scope for using mixed seafood?
