Directions

Heat the chicken stock. Add the saffron, cover the pot and allow to sit for 10 minutes.
Heat a skillet with the olive oil. Add the onion and cook until lightly browned. Add the rice and cook, stirring often, until it dries up on all sides. Do not brown it.
Add the rice to the hot stock. Season with salt. Bring to a boil. Cover and reduce the heat. Steam the rice for 20 minutes. Do not uncover the pot for any reason! Turn off the heat and fluff the rice with a fork. Serve as a side for your favorite dish. Enjoy!
