1 pound black beans
1 small onion - chopped
4 garlic cloves - minced
2 TBS chopped cilantaro-stems included
1 Jalapeno-seeded and chopped
1 TBs cumin
salt and pepper
1/2 cup heavy creamm
1/4 cup shredded cheese-preferably Mexican blend
Vegetable oil
Directions
Rinse beans well and make sure to remove all dirt.
Place in a large bowl cover with boiling water and soak overnight.
Place soaked beans with liquid, onion, cilantro, jalapeno, cumin salt and pepper ina pressure cooker.
Add enough water to cover beans by 2 inches.
Cook beans for 30 minutes.
After 30 minutes place beans in a food processor
Process beans until creamy
Heat a large skillet with vegetable oil.
Add the beans and fry for a few minutes.
Add the cream and cheese.
Stir and cook for a couple of minutes.
Remove from heat and serve as side dish or dip.
