Directions

GETTING READY
1. Cut the red and green cabbage in half and take out the stem and shred it.
2. Can be shredded in the food processor too.

MAKING
3.Transfer the shredded cabbages in a big bowl
4.Sprinkle some salt or lemon juice and knead it well with your hands till it is moist.
5.Transfer the mixture in a glass jar leaving some space on the top, covering it with a small piece of cabbage leaf.
6.Cover the glass jar with a cloth and store it in a dry place.

SERVING
7.Serve mixed with your favorite salads.

TIP
Vegetables like arame sea vegetable, chilies, Napa cabbage, minced ginger, radish, dill with some salt can also be fermented with the Sauerkraut(sour cabbage).
